An easy, delicious salad with grilled avocado, crisp lettuce, Parmesan and the most wonderful creamy garlic dressing.
Avocado salad is a perfect match for the summer barbecue, – and it is packed with flavour and lovely textures.
Grilled avocado tastes fantastic, – it takes on, naturally ;-), that classic smoky flavour from the grill, and I think it just looks so pretty too.
Instead of garlic dressing, the grilled avocado salad can also be topped with, for example, this creamy mustard vinaigrette – click here, or a good creamy dill dressing – click here.
Grilled avocado salad goes with just about anything, – it is really good with pan-fried or grilled chicken, baked or pan-fried salmon, pork tenderloin and in fact also a good steak, a roast or the like.
Grilled avocado salad with garlic dressing
Ingredients
Grilled avocado salad
- 2 avocados
- 2 small romaine lettuces or 1 crisp (batavia) lettuce
- 70 g rocket
- 25 g pine nuts
- Parmesan shavings
- A little lemon juice and oil for the avocados
Garlic dressing
- 150 ml crème fraîche
- 50 ml mayonnaise
- 1 clove garlic, grated or crushed
- 1 tbsp chives, finely chopped
- 1/2 tbsp lemon juice
- 1/2 tsp Dijon mustard
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper
Method
Garlic dressing
- Mix the ingredients for the garlic dressing, season to taste with salt and pepper, and keep it in the fridge until ready to serve.*Start with one clove of garlic, – the flavour develops over time. If you love garlic, you can easily add two cloves.
Grilled avocado salad
- Toast the pine nuts in a dry frying pan and leave them to cool.
- Halve the avocados and remove the stones. Drizzle them with lemon juice, brush them with a little oil, and grill them on a griddle pan or on the barbecue for 3-4 minutes, or until they have nice char marks.
- Toss the lettuces together and top with the grilled avocados.*Remember to remove the skin from the avocados before adding them to the salad.
- Sprinkle with the pine nuts and Parmesan shavings and top with the garlic dressing.Serve with grilled bread or some crisp croutons if you like, and serve the rest of the dressing on the side.

Rigtig dejlig dag 🙂
