Atmosphere and setting
Evolushi Plus is at Teatergatan 32, close to Avenyn and Stora Teatern. The restaurant describes its cooking as traditional Japanese quality sushi combined with Swedish flavours, and the menu is fusion sushi with nigiri, lyxmaki rolls, crispy rice, small plates (smårätter) and tasting menus.
From the photos, we had actually pictured a slightly larger restaurant. But once inside, it turned out to be a fairly small place with room for perhaps 20–30 guests, with bar stools, high tables and rattan lamps. Cosy and more intimate.
People clearly didn't come only to eat sushi but also to enjoy cocktails, so the mood was relaxed and a little bar-like. Things were fairly lively at the table behind us, and that is something to be prepared for. For us it was part of the charm.
Cocktail with raspberry and yuzu
Dianna started with a cocktail featuring raspberry and yuzu, among other things. Yuzu is an Asian citrus fruit with a fresh, aromatic flavour, and together with raspberry it gave a really lovely balance of sweetness and acidity.
The cocktail was superb, and we quickly got the sense that Evolushi Plus isn't only serious about sushi. They can certainly make cocktails too. For the food itself we ordered a bottle of white wine.
The tasting menu and the small starters
We chose the tasting menu for two (1,070 SEK). We really like going for tasting menus when we visit a restaurant for the first time. You get to try dishes you might not have ordered yourself, and a good feel for the kitchen's style. Here we certainly weren't disappointed.
One of the first courses was Guacasmash with avocado, coriander, ponzu, red onion, sesame, nori and rice crisps. The ingredients arrived in a small bowl, and we had to mash and mix them ourselves at the table before eating the guacamole with the crisp rice crisps, which were dusted with a little hot chilli powder, among other things. It was simply so much fun, and it was one of the things we got most excited about. We immediately said we have to try it at home next time we have guests. The restaurant has since sent me the ingredients, so I'm heading home to experiment with my own version for Gourministeriet.
We also had gyoza, deep-fried dumplings, and they were really delicious. Then there was edamame with kimchi-roasted sesame seeds and homemade teriyaki sauce. We've had edamame beans in a great many restaurants by now, but here they had really gone the extra mile. The marinade gave them loads of flavour, and they tasted fantastic.
The sushi courses
After the starters we moved on to the sushi itself, and this is where it really started to get interesting. The courses were far more experimental than the sushi you normally get, with plenty of different flavours, textures and ingredients.
The salmon nigiri was the more traditional course with the classic accompaniments, and it worked well as part of the menu. Spicy Tuna with honey-marinated tuna, cucumber, avocado, coriander, chilli mayo and sweet sriracha had crisp elements around the roll, which gave an exciting contrast between the soft fish and the crunch.
One of the more surprising courses was the Gonpachi Roll with pulled pork, cucumber, black truffle, truffle mayo, spring onion and sesame seeds. It's hardly the combination you associate with sushi, but it was really delicious and showed how creatively the kitchen works. Tempura with deep-fried prawn, crisp lettuce, avocado, chilli mayo and deep-fried carrot added yet another variation, and we're very fond of crisp tempura becoming part of a sushi course.
Smoke across the table and a small dessert
One of the most memorable courses was the crispy rice avocado, small crisp rice cakes with avocado and cheese, among other things. They came with liquid nitrogen, so suddenly a cloud of smoke spread out across the table. That went down a storm with Alberte and Olivia in particular:)
Finally we had a small dessert – a chocolate shell with white chocolate cream, cherry compote and toasted coconut. A delicate, fresh finish after all those different flavours.
Friendly and personal service
The service was really good. The staff were friendly and welcoming, and everything felt warm and personal. It suited the informal atmosphere of the small room well.
Price and level
The tasting menu for two cost 1,070 SEK. With the cocktail, a bottle of white wine and some rice and edamame for the girls, the bill came to around 2,000 SEK for the four of us.
We think the tasting menu is a really good way to experience the kitchen. You get many courses, care has gone into the presentation, and a few dishes have an element of entertainment that goes beyond the food itself. If you'd rather choose for yourself, small plates (smårätter) are 120–180 SEK and nigiri (5 pieces) 98–148 SEK according to the menu.
We had a really lovely evening at Evolushi Plus with delicious sushi, creative combinations and a cocktail that showed they know their drinks too. It's a place we can warmly recommend if you love sushi and want to try something a little different. We'd happily come back next time we visit Gothenburg.
