Beef paprika stew (paprikagryde) – an easy, creamy stew with beef and cocktail sausages.
Beef paprika stew is an easy, satisfying one-pot dish that is always a hit at the dinner table.
Here, tender beef is simmered in a creamy paprika and tomato sauce that is mild, full of flavour and child-friendly – a classic the whole family loves.
I often use sirloin (tyndsteg) or a small piece of fillet, which need only a short cooking time and give a wonderfully tender result. You can use other cuts of beef too, but bear in mind that some need a longer simmer before they turn tender. If the stew is going to simmer for a long time, it is a good idea to hold back the peppers until about 10 minutes before serving so they keep some bite, and remember to top up with extra stock as well.
Paprika stew is an obvious choice for autumn and winter, when you crave warming, creamy stews, but it works just as well in spring and summer, served with a fresh salad on the side.
I often serve paprika stew with rice or mashed potato, but try it with pasta or a baked potato too – or a lighter option such as fried pointed cabbage, cauliflower rice or roasted vegetables. The stew freezes well, so do make a double batch while you are at it.
Paprika stew – a one-pot dish for the whole family
Paprika stew is one of those classic one-pot dishes that bring the whole family together around the table. It is creamy, rich and full of flavour – yet still mild enough for the children to love it. A true family favourite that is easy to make, properly filling and can be varied endlessly.
You can use whipping cream (38% fat) or a lighter alternative such as cooking cream. You can also use half cream and half milk and adjust the consistency with cornflour if needed.
Beef paprika stew (paprikagryde)
Ingredients
- 500 g beef, cut into slices or strips
- 200 g
cocktail sausages
- 150 g bacon, cut into large dice
- 200 g mushrooms, quartered
- 1 onion, roughly chopped
- 3 cloves
garlic, grated or crushed
- 2 tbsp
paprika
- 3 tbsp
tomato purée
- 1-2 peppers, cut into strips
- 1 tin chopped tomatoes or crushed tomatoes (polpa)
- 250 ml
vegetable stock
- 250 ml cream whipping cream (38% fat) or cooking cream
- Salt and freshly ground pepper
-
A little olive oil for frying
To serve
- Mashed potato, potatoes, rice or pasta
- Roasted vegetables or cauliflower rice
- Chopped parsley
Method
- Heat a casserole or deep frying pan and brown the meat well in a splash of oil. Season with salt and freshly ground pepper, then set the meat aside on a plate. At the same time, put a frying pan or saucepan over a low heat and let the sausages fry until golden while you make the rest of the dish.
- Pour a little oil into the pan the meat was browned in, fry the bacon until lightly golden, then add the mushrooms and fry until they have released their liquid.
- Add the onion and garlic and fry until the onion is translucent, then sprinkle over the paprika and stir to combine.
- Add the tomato purée and stir well, then add the peppers and return the meat to the pan.
- Pour in the stock and the chopped tomatoes and let the stew simmer gently for 5-10 minutes – depending on the cut of meat used.
- Add the cream and stir the cocktail sausages into the stew. Heat through and season to taste with salt and freshly ground pepper.
- Serve the stew with your chosen accompaniments and a sprinkling of finely chopped parsley.
