Rösti waffles with carpaccio and truffle mayo bring together crispness, creaminess and a fresh bite in the most delicious way. This elegant appetizer is perfect for festive occasions such as Christmas, New Year’s Eve, birthdays or summer get-togethers – it looks impressive, but is remarkably easy to make.
The small, crisp rösti waffles are made from ready-made rösti potatoes, which are simply thawed and cooked in a waffle iron until golden. This gives them a distinctive shape and a perfect texture that forms the base for the delicate toppings. The waffles are topped with carpaccio wrapped around a little peppery rocket and finished with a creamy truffle mayo that adds a luxurious depth of flavour.
You can easily make the truffle mayo yourself or buy a good-quality one. If you have access to fresh truffle, grate a little over the top for an extra touch, but the dish works beautifully without truffle too – try a Parmesan mayo instead for a milder flavour.
This recipe is not only delicious but also straightforward. You can prepare the components ahead of time, so the little waffles are quick to assemble just before serving. That makes them an obvious choice when you want to impress without spending too long in the kitchen.
Serve the rösti waffles as part of a tapas spread, as an appetizer or as a light snack – your guests will love them!
Can I leave out the truffle?
Yes, if truffle isn’t to your taste, you can easily make the dish without it. Simply swap the truffle mayo for a Parmesan mayo, – the same recipe, leaving out the truffle oil and adding a little extra Parmesan for a rich, full flavour.
Rösti waffles with carpaccio and truffle mayo
Ingredients
- 16 ready-made rösti potato patties – thawed
- 16 slices carpaccio
- 1 handful rocket
- Finely grated Parmesan
Truffle mayo
- 20 g egg yolk approx. 1 yolk
- 20 g Parmesan, finely grated
- 1 tsp Dijon mustard (scant tsp)
- 1/2 tbsp lemon juice
- 150 ml neutral-flavoured oil
- 1-2 tsp truffle oil – to taste
- Salt and freshly ground pepper (optional)
Method
Truffle mayo
- Put the egg yolk, Parmesan, Dijon mustard and lemon juice in a mini chopper and blend until you have a smooth, even cream. Scrape down the sides if needed.Depending on how wide your mini chopper is, you may need to tilt it slightly so the blade catches the mixture.
- Add the truffle oil and the neutral oil in a thin stream, a little at a time, and keep the mini chopper running until all the oil is used up and the mayonnaise has thickened. Again, it is important to tilt the mini chopper slightly so the blade mixes the ingredients from the start, otherwise your mayonnaise may not thicken.Season the mayonnaise to taste with more truffle oil, salt and, if you like, freshly ground pepper, and keep it chilled until serving – ideally in a piping bag.
Rösti waffles with carpaccio and truffle mayo
- Place the thawed rösti potatoes in a hot waffle iron and press them flat. Cook until golden and crisp.Continue until all the potatoes are done, setting them aside on a wire rack as you go so they stay crisp. Let them cool so the mayo doesn’t melt.
- Pipe a little mayo onto the base of each rösti waffle.
- Take a little rocket, fold a slice of carpaccio around it and place it on top of the rösti waffle.
- Finish with more mayo and finely grated Parmesan, and season with freshly ground pepper and, if needed, a pinch of salt.
Tak for at dele 🙂
Warm wishes, Dianna
Super lækkert opskrift
Hvor er skålene fra?
Hej Maiken
Tusind tak:) Skålene er fra Tybo:)
Warm wishes, Dianna
Hvilken trøffelolie bruger du? Hvid eller sort? Og evt. mærke?
Hej Jannie

Hej Pia
