Creamy pointed cabbage salad, coleslaw-style, with apple, peas, sweetcorn and lemon dressing.
If you are looking for a fresh, creamy and truly flavourful salad, try this pointed cabbage salad with apple, peas and lemon dressing. Crisp pointed cabbage (also sold as sweetheart or hispi cabbage) is combined with sweet apple, crisp peas, juicy sweetcorn, mild spring onions and chopped pistachios, which together give a lovely mix of crunch, sweetness and plenty of freshness.
Everything is tossed in a light, creamy lemon dressing made with crème fraîche, a little mayonnaise, lemon, honey and Dijon mustard. It is a dressing I have fallen completely for, because it is fresh and creamy with just the right balance of acidity, sweetness and a hint of mustard. I like to use 9% fat crème fraîche, as it gives a light consistency that coats the salad nicely without becoming heavy.
The salad is very easy to make and is perfect as a side for summer barbecues, but it is every bit as good with stews, roast chicken, juicy pork chops or a piece of fish. It calls a classic coleslaw to mind, but in a lighter, fresher and more colourful version packed with the best of the season’s produce.
If you would like a little extra variety and even more crunch, top the salad with a few more coarsely chopped pistachios, or add salted almonds or walnuts. That said, the salad is just as delicious exactly as it is – simple, fresh and full of flavour.
