A recipe for a wonderful mojito with passion fruit – fresh, tangy, sweet and thirst-quenching.
Passion fruit mojito – actually one of my favourites when it comes to mojitos. I love the flavour and freshness the passion fruit brings to the drink. A true summer drink in the most beautiful colour.
A passion fruit mojito really only calls for the same ingredients as a classic mojito, plus fresh passion fruits. There is plenty of flavour in the passion fruit itself, so there is absolutely no need to add passion fruit concentrate, syrup or the like.
You can top your passion fruit mojito with half a passion fruit. It looks stunning, but it is by no means essential. If you do, you can of course use it in the next cocktail;-)
Passion Fruit Mojito
Ingredients
- 8 cl white rum
- 2 passion fruits
- 1 lime, cut into wedges
- 2 tbsp sugar (I prefer cane sugar)
- 20 mint leaves
- Soda water
- Ice cubes
Garnish (optional)
- 1 passion fruit, halved
- Mint
Method
- Put the lime wedges, sugar and rum in a shaker or a glass and muddle them well together, ideally with a muddler.
- Add the mint leaves and press them lightly with the muddler so they release their oils – just a couple of times. Don’t crush them too much.
- Add the pulp from both passion fruits and stir well.
- Fill 2 glasses with ice, ideally crushed ice, and divide the mixture between the glasses.Don’t strain it – tip the lime wedges, mint and all into the glasses too. There is plenty of flavour in them, and it looks lovely and rustic.
- Stir well with a spoon so everything is thoroughly mixed with the ice, and top up your passion fruit mojito with soda water.
- Garnish with half a passion fruit and a little mint, if you like.
