Advertisement// Another lovely collaboration with Masi — you simply never tire of great red wines. This bottle is well worth seeking out; I served it with this ravioli with osso buco and truffle.

About the wine
A superb red from Masi: deep and rounded in flavour, full-bodied and with a lovely touch of sweetness.
Like Masi’s Amarone, the wine is made from grapes handled according to the appassimento method — that is, dried on bamboo racks over the winter to develop an intense, concentrated aroma. With its soft, supple tannins the wine is very “easy to drink”, and excellent value for the price.

Serving suggestions
A versatile wine that in fact goes with most “red wine dishes”, but it pairs particularly well with pasta in rich, robust sauces, mature cheeses and dark meats.
I chose to serve this Campofiorin with a ravioli filled with osso buco, a brown sage butter and plenty of fresh truffle on top.
The wine is a perfect match for the richness of the filling, the powerful flavour of the truffle, and the simple yet still flavourful sage butter sauce.
A wine I will no doubt be serving summer and winter alike — with cheese, with pasta, or simply to enjoy a glass on its own.
