Green pasta salad with asparagus, peas and lemon vinaigrette.
Green pasta salad with asparagus and peas is spring and summer on a plate.
A fresh, simple pasta salad full of crisp green vegetables – green asparagus, peas, cucumber, lettuce and spring onions – that bring plenty of both flavour and texture. It is all tossed in a light vinaigrette of olive oil, lemon, honey and Dijon mustard, which brings everything together beautifully.
It is a really easy pasta salad that works perfectly as a side for the barbecue or as a light lunch or dinner. I often top it with a little crumbled feta for extra flavour, but it is every bit as good in a completely plain version.
A lovely green pasta salad that is quick to make, full of flavour and perfect for the days when you want something light and fresh.
When fresh peas are in season, I really recommend using freshly podded peas – they taste wonderful.
