A juicy burger with crispy panko-coated chicken and homemade tartare sauce.
Fried chicken burger – it really does taste wonderful. Crisp, juicy chicken paired with a creamy, full-flavoured tartare sauce. A favourite burger in our house, and very easy to make.
In this recipe I cook the chicken in my air fryer – it is effortless and comes out beautifully crisp.
The pieces can also be cooked in the oven, following the same method as for the air fryer, but there they need about 20 minutes at 200°C.
You can also fry the pieces in oil in a frying pan or deep-fat fryer – the method is slightly different there. Read on below.
Crispy chicken in a frying pan
If you would rather fry the chicken until crisp in a pan, you can easily do so. The method is slightly different from the one described in the recipe, though.
To fry the chicken in a pan:
Toss the chicken pieces in a little plain flour mixed with the spices listed in the recipe.
Then dip them in beaten egg, and finally coat them in the panko breadcrumbs.
The chicken is now ready to be fried in a neutral-flavoured oil in the pan.
Fried chicken burger – Crispy chicken burger with tartare sauce
Ingredients
Crispy chicken – cooked in the air fryer
- 600 g chicken mini fillets (inner fillets)
- 1 egg
- 2 tbsp oil
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper
- 250 ml panko breadcrumbs
- 50 g Parmesan, finely grated (optional)
- Cooking oil spray
Tartare sauce
- 250 ml mayonnaise
- 4-5 tbsp fresh herbs – I use dill, chives and parsley
- 2 pickled gherkins, finely chopped (just over 50 ml)
- 1 tbsp capers, finely chopped
- 1-2 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp onion powder
- Salt and pepper
To serve
- 4 burger buns
- Fresh salad leaves – I use lamb’s lettuce
- Pickled red onions, optional – find the recipe here
Method
Crispy chicken – cooked in the air fryer
- Mix the panko breadcrumbs and Parmesan and set aside.
- Whisk the egg, oil and spices together well, and season with salt and pepper.
- Turn the chicken thoroughly in the egg mixture, then coat the pieces in the breadcrumb mixture.
- Place the chicken in the air fryer in a single layer and spray the tops with cooking oil spray.
- Cook for about 12 minutes at 200°C on the air fryer setting.*Check the pieces after 6-8 minutes – in some air fryers the pieces need turning to crisp up on both sides. Remember to spray the newly exposed side with oil spray if you turn them.*If cooking the chicken in the oven, it needs about 20-25 minutes at 200°C. Spray both sides with oil spray and turn the pieces halfway through.
- Season the chicken with a little salt after cooking.*If you would like to cook the chicken in oil or in the oven, see the method in the introduction.
Tartare sauce
- Mix all the ingredients for the tartare sauce and season to taste with salt and pepper.*If you prefer a lighter tartare sauce, you can easily replace 1 – 1 1/2 dl (100-150 ml) of the mayonnaise with crème fraîche. This makes it less rich and adds more acidity. When I use my tartare sauce as a dip, I prefer to make it as described above, as it is then a little less heavy. When I use it in a burger, I make it with mayonnaise only.
Fried chicken burger – Crispy chicken burger with tartare sauce
- Halve the burger buns and warm them in the oven, in the air fryer or on the barbecue.
- Spread the burger buns with tartare sauce and top the bottom halves with fresh salad leaves, followed by the crispy chicken and pickled red onions, if using. Close the burger with the top half and serve straight away.

Hvad hvis man ikke har en fedt spray? Kan jeg sprinkle med lidt olie?
Hej Pia
Sagtens ja, eller forsigtigt pensle dem med et helt tyndt lag 🙂
Warm wishes, Dianna
