There is just something about fajitas that never goes out of fashion. They are fresh, filling and spicy – and a dish the whole family loves.
This version is made with chicken, fairly classic, and with plenty of flash-fried peppers, so they keep their bite and juiciness – exactly as they should.
The chicken is fried with my homemade fajita seasoning, but you can of course use a ready-made sachet from the supermarket if you need it to be extra quick – that works perfectly well too.
Fajitas make a brilliant weeknight dinner because they are so easy to adapt when it comes to serving – you can serve them in small tacos, in wraps, with a bowl of rice, or simply all of it at once.
It is food that invites everyone to gather round the table – and it both tastes great and looks festive.
It really does not call for many ingredients – and dinner is ready in no time.
Healthy, easy and thoroughly delicious dinner – ready for busy weekdays.
