Easy, delicious Caesar tacos, – filled with everything you love about a classic Caesar salad.
These tacos simply taste wonderful, – they are made with minced chicken, crisp romaine, croutons, Parmesan shavings and Caesar dressing.
The method is the same as for my Big Mac Tacos – click here for the recipe. The meat is pressed out over the small tortilla wraps, which are then fried – first on the meat side, then briefly on the tortilla side. The tortilla takes on a wonderful flavour when it is fried, and the whole combination of crisp lettuce, Parmesan and dressing just works so well together.
Caesar tacos are incredibly easy to make, and they work for both lunch and dinner.
Allow about 2 per person on average, – and serve extra salad, chips or raw vegetable sticks on the side if you like. Some people will happily eat more, – so adjust the quantities to how hungry your family is.
The dressing recipe will comfortably stretch to 2-4 extra tacos.
Caesar tacos
Ingredients
- 600 g minced chicken
- 8 mini tortilla wraps
- 1 large romaine lettuce, shredded
- Bread croutons – click here for the recipe
- Parmesan shavings
- Salt and pepper
Caesar dressing
- 2 egg yolks
- 100 ml rapeseed oil
- 40 g Parmesan
- 2 small anchovy fillets
- 1 clove garlic
- 2 tbsp lemon juice
- 25 ml water, – adjust the consistency, you may need a little more or less
- Salt and pepper
Method
Caesar dressing
- Put the egg yolks in a mini chopper/blender with the garlic, anchovy fillets, Parmesan and lemon juice, and blend well.
- Add the oil a little at a time while blending, – continue until all the oil is used and you have a thick, creamy mayonnaise.
- Add the water a little at a time, still blending, until you reach the consistency you want. The dressing should be creamy and not too thin. Season to taste with salt and pepper.*You can also add more lemon juice if you want a sharper dressing.
Caesar tacos
- Divide the meat into portions of 75 g each and press it out over each tortilla so it covers the whole wrap. Prepare them all, – and season with salt and pepper.
- Heat a splash of oil in a frying pan and fry them for 2-3 minutes over a good high heat, – meat side down. Press them down firmly with a spatula or similar for the first little while. *Depending on the size of your pan, you can fry one or two at a time.
- Then turn them over and fry on the tortilla side for about a minute.*Check that the meat is cooked through!
- Just before serving, top with crisp romaine, croutons, Parmesan shavings and Caesar dressing.
