Burrata with Air Fryer Roasted Tomatoes

Roasted tomatoes, toasted bread and pine nuts, all cooked in the air fryer and served with creamy burrata, – a lovely burrata and tomato salad.
An air fryer recipe that is very easy to make, and perfect as lunch for 2, or as a snack, starter or side for 4.
Air fryer roasted tomatoes take hardly any time at all, and while you are at it, you may as well toast the bread and pine nuts in your air fryer too, rather than heating up a frying pan.
The whole thing can be ready in under 30 minutes, – if the bread has to be done in two batches, it will take a little over 30 minutes 🙂
Your air fryer doesn’t need to preheat like an oven, – so you save both time and energy.
If you don’t have an air fryer, you can of course cook everything in the oven and/or in a frying pan, – but this recipe is written for an air fryer.

Burrata with roasted tomatoes, roasted garlic, pine nuts and plenty of fresh basil. It tastes so fresh and bright, a proper summer dish, – that is just as welcome on a cold winter’s day.
The quickly roasted tomatoes take on a wonderful sweetness, and the juices they release as they cook, mingling with the oil and seasoning, are delicious poured over the burrata.
The dish can be served as lunch for 2, or as a snack, starter or side for 4.
Serve it with a summer barbecue, baked salmon, roast chicken or similar, – or put a platter on the tapas table.

Method

  • Tip the pine nuts into a dish that fits in your air fryer and toast them for 4-5 minutes at 160°C. I use a round dish that came with my air fryer.
Set them aside on a plate.
  • Cut the baguette into thin slices, brush/spray them with a little oil, sprinkle with salt and lay them directly on the rack in the bottom of your air fryer, – in two batches if necessary.
Bake them for about 8 minutes at 180°C.
Set the slices of bread aside on a wire rack.
  • Tip the tomatoes into a dish that fits in your air fryer, I use the same one as for the pine nuts.
  • Drizzle the oil and scatter the dried basil over the tomatoes, season with salt and pepper, and add the crushed garlic cloves.
You can crush the garlic with the flat of your knife blade, the bottom of a mug or similar.
  • Roast the tomatoes for about 8-10 minutes at 190°C, – then let them rest for a couple of minutes out of the air fryer.
  • Meanwhile, place the two burrata on a plate, open them up well, and scatter the fresh basil leaves over the whole plate.
  • Add the roasted tomatoes and garlic, – and pour the oil/juices from the roasted tomatoes over the burrata.
  • Season with freshly ground pepper, scatter over the pine nuts and serve with the crisp slices of bread.

  2. Tine Lindgreen

  8. Daniela

Hi! Does the dish should be served once the tomatoes are cold? Or they should be hot?

    • Hi Daniela

I prefer to let them rest for about 5 minutes after cooking, and then place them on the burrata 🙂

      Best regards
      Dianna

  9. Tina Schmidt

  10. Shalini

    Tak Dianna

  11. Tak for altid lækre opskrifter

    Vh Maria

    • Hej Maria

      Warm wishes, Dianna
