Baked tomatoes with burrata and pine nuts

Baked tomatoes with burrata and pine nuts is a simple yet luxurious dish that suits any occasion.
The sweet tomatoes take on an intense flavour when they are roasted in the oven with dried basil, garlic and good olive oil. When the slightly cooled tomatoes are spooned over the soft, creamy burrata, the flavours melt together into something truly memorable.
The dish is finished with plenty of fresh basil and crisp, toasted pine nuts, which add colour, flavour and texture.
Serve it as a starter, a light lunch or an elegant snack – with freshly baked baguette, crisp slices of toasted bread or flatbread alongside.

The dish also makes a lovely side for larger meals such as barbecues, roast chicken or other simple main courses. It is a recipe that is incredibly easy to prepare and can be on the table in no time once your guests are ready to be spoiled.

With just a few ingredients and an elegant look, baked tomatoes with burrata and pine nuts is a dish that tastes wonderful and always makes an impression – try it for yourself.

Method

  • Slice the garlic cloves thinly and place them in an ovenproof dish together with the tomatoes.
  • Pour over the oil and season with the dried basil, salt and freshly ground pepper.
  • Bake the tomatoes in a preheated conventional oven (top and bottom heat) at 200°C for about 15 minutes.
  • Meanwhile, toast the pine nuts in a dry frying pan until golden.
  • Drain the burrata of any liquid. Place them on a plate and open them up with your fingers or two forks.
  • Scatter over fresh basil leaves and top with the slightly cooled tomatoes, along with the garlic and the juices and oil from the dish.
  • Season with freshly ground pepper, sprinkle with the pine nuts and serve with freshly baked baguette, crisp slices of toasted bread or flatbread.
    Also wonderful alongside barbecued food.
