Broccoli and cauliflower salad with bacon
Ingredients
- 150 g bacon, diced
- 250 g broccoli
- 250 g cauliflower
- 1 red onion, thinly sliced
- 70 g dried cranberries – or raisins
- 40 g pumpkin seeds
Dressing
- 300 ml crème fraîche
- 50 ml mayonnaise
- 2 1/2 tsp white wine vinegar
- 1 tbsp freshly squeezed lemon juice
- 2 1/2 tsp sugar
- Salt and freshly ground black pepper
Method
- Fry the bacon in a frying pan until crisp, then leave it to cool on a little kitchen paper.
- Pour boiling water over the broccoli, then rinse it in plenty of cold water. Cut it into small, bite-sized florets and leave them to dry on a tea towel. If you prefer the broccoli slightly cooked, you can instead leave it to sit in boiling water for a few minutes. Then rinse in cold water and leave the florets to dry completely on a tea towel.
- Cut the cauliflower into small florets too.
- Mix the dressing ingredients together and season to taste with salt and freshly ground black pepper.
- Put all the ingredients in a bowl and stir well to coat everything in the dressing.
- Keep the salad in the fridge until ready to serve.
Den bedste salat man kan tænke sig. Frisk og med “bid”. Super lækkert. Kan bruges som selvstændig ret eller som tilbehør. Man kan udelade bacon så passer den til alt.
