Pasta alla puttanesca

Pasta alla puttanesca

Pasta puttanesca — an Italian classic packed with flavour.
It is spicy and warming, simple and quite simply delicious.
A relatively short list of ingredients comes together in an incredibly flavourful pasta sauce: straightforward and really good.
Puttanesca is full of garlic, capers, olives, anchovies and tomato. It is really easy to make and quick to get on the table too.
I prefer my pasta puttanesca with spaghetti or linguine, though pappardelle also works really well with the sauce.
Pasta alla puttanesca is wonderful on its own, for dinner or lunch alike. You can also serve it with, say, tiger prawns stirred through, which go beautifully with the other ingredients.
Some people also add tinned tuna to the sauce. That’s not for me, but do try it if you think it might be for you.

Method

  • Fry the shallot, garlic and anchovies in a good glug of olive oil for a couple of minutes, then add the capers, olives and chilli flakes.
  • Stir in the tomato purée and let it cook for about a minute, then pour in the chopped tomatoes.
Let the sauce simmer over a medium heat for 10-15 minutes, and meanwhile cook your pasta until al dente. Save a little of the pasta water for adjusting the consistency.
  • Stir the parsley into the sauce and season to taste with salt and freshly ground pepper.
  • Toss the pasta with the sauce in the pan, adjusting the consistency with a little pasta water if needed.
  • Serve your pasta alla puttanesca with freshly ground pepper and parmesan on top.

Alt i alt.

      Warm wishes, Dianna
