An easy, satisfying pasta dish with tortellini and chicken, – tossed in the creamiest tomato sauce.
It’s on the table in 20 minutes and tastes wonderful.
The creamy tomato sauce is made with chopped tomatoes/polpa (finely chopped tinned tomatoes), white wine, cream and parmesan, – and seasoned with basil, oregano and a little chilli.
You can of course replace the white wine with stock, – but bear in mind that the alcohol cooks off as the sauce simmers.
A quick and easy pasta dish you can serve on weekdays and at the weekend alike, – for family and guests.
I buy the tortellini ready-made, – I like to use the ones filled with spinach and ricotta. They usually need no more than a couple of minutes in boiling water, – and then you can toss them in the creamy tomato sauce.
Tortellini and chicken in creamy tomato sauce
Ingredients
- 500 g tortellini
- 400 g chicken, cut into bite-sized pieces
- 75 g fresh spinach
- 1 onion, finely chopped
- 4 cloves garlic, grated or crushed
- 1 tin polpa or chopped tomatoes
- 3 tbsp tomato purée
- 250 ml cream whipping cream (38% fat) or double cream
- 150 ml white wine – or stock
- 80 g parmesan, finely grated
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp chilli flakes – optional
- Salt and pepper
- Olive oil
- Fresh basil to top, if you like
Method
- Heat a glug of olive oil in a frying pan, brown the chicken well and season with salt and pepper.*It doesn’t need to be cooked through, – it will finish cooking in the sauce.
- Add the onion and garlic and fry until the onion is translucent, then add the tomato purée, dried herbs and chilli flakes and heat through for about a minute.
- Pour in the white wine and let it reduce slightly, then add the chopped tomatoes and the cream.
- Let the sauce simmer over a medium heat for 7-8 minutes, then stir the parmesan into the sauce.
- Cook the tortellini according to the packet instructions, drain, and toss them in the sauce.
- Finally, fold the spinach into the sauce, season to taste with salt and pepper, – and top with fresh basil if you like.

Hi,
Can this be made the day before?
Thank you for sharing
You might not realise it but for every meal you leave hundreds of people with a smile of satisfaction in their tummy. And that’s all because of your incredible recipes
Hi there
A huge thank you 🙂 That truly means so much to me – your kind words just made my day:)
It makes me so happy to know that my recipes bring joy and satisfaction.
And yes, this dish can absolutely be made the day before.
Just be careful not to overcook the tortellini, so they don’t become too soft when reheated.
Again, thank you so much – and have a truly wonderful day:)
All the best
Dianna
Hej
Kan den mon laves uden kylling? Vi forsøger at spare på kødet herhjemme
Hej Linette
Det kan du sagtens gøre ja – smager skønt uden kylling også:)

Hej
Tak for altid super gode opskrifter.
Kan man erstatte kylling med kalvefars ?
Kh:/ Lis
Hej Lis
Warm wishes, Dianna
