An easy feta toast with whipped feta, fresh figs, honey, toasted hazelnuts and thyme.
Serve it as a dessert or as a light lunch with a handful of rocket on the side, tossed with olive oil and freshly ground pepper. You can also serve it as a starter on smaller slices of bread.
The combination of the crunchy toasted bread, the soft, salty whipped feta, the sweet honey, the figs and the toasted hazelnuts works beautifully together.
Remember that toasted hazelnuts keep well in an airtight container, so do make a larger batch while you are at it, – they taste far better once toasted. Find the recipe for toasted hazelnuts here.

- Fresh thyme
- Honey

- Add the rest of the yogurt, the lemon juice, lemon zest and freshly ground pepper, – and blitz in the mini chopper until you have a smooth, creamy consistency. Season to taste with salt.*Take care not to blend it for too long in the mini chopper, or you may find the consistency becomes too thin.
Toast with whipped feta, figs, honey and hazelnuts
- Toast the bread, – either in a toaster or in a frying pan with a little butter or oil.*Let the slices cool so the whipped feta does not melt when you spread it on.

- Drizzle honey over the top, and finish with the toasted, chopped hazelnuts, fresh thyme, freshly ground pepper and a little flaky sea salt.
