Toast Skagen is one of the lunch dishes I eat most often when we’re in Sweden in the summer – and do you know why?
Over there it often comes piled extra high, loaded with prawns and a creamy dressing that makes it irresistible. And they really know how to make it.
This recipe is designed to work perfectly for lunch or as a generous piece of smørrebrød (Danish open-faced sandwiches). A good slice of toasted bread forms the base for the creamy prawn salad, which is made with crème fraîche, mayonnaise, Dijon mustard, lemon juice and dill – a simple combination that shows off the prawns at their best.
Why the bread matters
To get the texture and flavour just right, the bread needs to be properly toasted. You can either:
✔ Toast it in the toaster for a quick, crisp surface.
✔ Fry it in butter in a pan if you want a richer, golden edge.
Let the prawns be the star
A good Toast Skagen calls for plenty of prawns! Use shell-on prawns you peel yourself, or good-quality prawns in brine, for the best flavour and texture.
A classic that never disappoints – easy to make, but tastes like something far more elaborate. Perfect for lunch, a light dinner, or simply when you want to treat yourself to something a little special.
Toast Skagen – Swedish prawn toast
Ingredients
- 250 g prawns, peeled weight (without shells and/or brine)
- 2 slices bread
- 75 g crème fraîche
- 75 g mayonnaise
- 1/2 tsp Dijon mustard
- 1 tbsp freshly squeezed lemon juice
- 2 tbsp finely chopped dill
- A few salad leaves – watercress or similar
- Salt and freshly ground pepper
- Butter (optional)
Method
- Peel the prawns, or drain them well if using prawns in brine. Pick out any bits of shell or grit and pat them dry with kitchen paper.
- Toast the bread in a toaster – or fry it in butter in a frying pan.
- Meanwhile, mix the dressing ingredients and season to taste with salt and freshly ground pepper. Fold the prawns into the dressing.
- Butter the toast if you like, then top with a few leaves, a generous layer of prawn salad and a few extra leaves on top.
- Season with freshly ground pepper and serve.
