Thai beef salad – a wonderfully fresh Thai-inspired steak salad with crisp vegetables, juicy pink rib eye and a vibrant lime, garlic and chilli marinade.
If you have been to Thailand, you have almost certainly been served a Thai beef salad. It tastes wonderful – fresh, crisp and full of flavour.
The last time we were in Thailand we took a private cooking class at the hotel – a fantastic experience. This Thai beef salad was one of the dishes we made.
It makes a lovely meal in itself, a starter or a side to a plate of spring rolls, chicken skewers or a Thai curry.
Thai beef salad
Ingredients
The salad
- 2 steaks, about 150 g each – I use rib eye
- 1 small romaine lettuce or other lettuce
- 10 cherry tomatoes
- 1/2 cucumber
- 1 small red onion
- 1 spring onion
- 1 handful flat-leaf parsley or coriander
- 1 handful peanuts, roughly chopped
- Oil
- Salt and pepper
Marinade
- 2 fresh limes, the juice only – about 50 ml
- 2 cloves garlic, finely chopped
- 2 tbsp soft light brown sugar
- 1/2-1 red chilli, finely chopped – decide for yourself how many of the seeds you want to keep in
- 1/2 tsp ground coriander
- 1 tbsp fish sauce
Method
Marinade
- Combine all the ingredients for the marinade – you may want to start with only half the chilli – and stir well.
- Leave the marinade to infuse while you prepare the salad, then taste it at the end and add more chilli if you like – chilli flakes work too.
The salad
- Heat a frying pan with a little oil – it needs to be searingly hot.
- Season the steaks with salt and pepper and fry them for about 2-3 minutes on each side, depending on their thickness and how you like them cooked.Leave the steaks to rest on a chopping board while you cut the vegetables.
- Trim and rinse all the vegetables thoroughly.
- Tear the lettuce into rough pieces, slice the cucumber thinly – if it is thick, halve it lengthways and scoop out the seeds first – halve the tomatoes and cut the onion into thin wedges.
- Finely slice the spring onion and roughly chop the parsley/coriander.
- Put all the vegetables in a bowl, pour over half the marinade and toss well.
- Cut the steaks into thin strips.
- Arrange the vegetables on two plates, top with the slices of steak, pour the rest of the marinade over the meat and scatter with the roughly chopped peanuts.

Kæmpe succes herhjemme. Jeg blander også lidt finthakket forårsløg i marinaden, som sagtens kan bruges på en andre retter fx tigerrejer
