Svensk pølseret – the classic, creamy Danish dish of sausages and potatoes in a paprika cream sauce.
Svensk pølseret is a true classic of Danish home cooking – creamy, filling and thoroughly satisfying, and a dish most Danes know and love. It is made with sausages, potatoes and a rich paprika cream sauce that brings everything together and carries plenty of flavour.
The dish typically consists of fried sausages, onion, potatoes and a creamy sauce flavoured with paprika and tomato, which gives it its characteristic taste and colour. In my version it gets extra depth from both sweet paprika and a little hot paprika, which adds a gentle kick without making it spicy. The cream makes it wonderfully smooth, while tomato purée and a spoonful of ketchup bring both sweetness and acidity.
The potatoes soak up the sauce and make the dish especially filling, while the browned sausages add both flavour and texture. It is finished with freshly chopped chives, which bring a fresh contrast to the creamy sauce.
It is a quick and easy dish that is perfect for weeknights – and an obvious way to use up leftover boiled potatoes. Classic comfort food that is always a hit.
Where does svensk pølseret come from?
Despite its name – it translates as ‘Swedish sausage dish’ – svensk pølseret has nothing to do with Swedish cooking. It is a thoroughly Danish dish that has been part of Danish homes for generations.
The name is thought to have come about more or less by chance – possibly as a way of giving the dish a “foreign” twist – but there is nothing to suggest it has roots in Sweden. On the contrary, it is a classic Danish everyday dish that became especially popular in the mid-20th century.
Svensk pølseret (Danish sausage and potato stew)
Ingredients
- 20 g
butter
- 2 tbsp
oil
- 1 onion, finely chopped
- 2 cloves
garlic, finely chopped
- 3 tsp sweet paprika
- 1/4 tsp hot paprika (or chilli powder)
- 100 g
tomato purée
- 8 good-quality sausages, cut into bite-sized pieces ready-cooked sausages such as frankfurters or hot dog sausages, not raw sausages
- 800 g cooked potatoes, diced
- 300 ml
whipping cream (38% fat)
- 1 tbsp
ketchup
- Salt and freshly ground pepper
- Finely chopped chives
Method
- Melt the butter with the oil in a frying pan and fry the onion and garlic until the onion is soft and translucent.
- Add both types of paprika and stir well, then add the tomato purée and let it fry for a couple of minutes.
- Add the sausages and let them brown with the onion mixture for about 5 minutes.
- Add the potatoes along with the whipping cream and ketchup and heat the dish through for about 10 minutes over a medium heat. Do not let it boil too hard, or the potatoes will break up. Stir gently from time to time.
- Season to taste with salt and freshly ground pepper, and add a little more cream if the dish needs more sauce.
- Serve immediately with plenty of freshly chopped chives on top.
Hvad spiser man til? Brød eller?
Hej Rikke
