My favourite marinade — packed with the flavour of sun-dried tomatoes, garlic, Parmesan, basil and parsley. A marinade I use in all sorts of dishes: pasta, salads, on pizza and so on.
It is stirred together in barely 5 minutes; then let it stand for 1/2-1 hour if you can, simply on the kitchen counter.
Depending on whether the marinade is going with pasta, fish, chicken or something else, you can adjust the seasoning with, for example, chilli flakes and freshly squeezed lemon juice.
A truly versatile marinade that works well in all kinds of dishes.
Sun-dried tomato marinade with herbs and Parmesan
Ingredients
- 100 ml olive oil – or use the oil from the sun-dried tomatoes
- 100 g sun-dried tomatoes – drained weight
- 80 g Parmesan, crumbled or finely grated
- 3 cloves garlic, grated or crushed
- 1 handful flat-leaf parsley, roughly chopped
- 1 handful fresh basil leaves, chopped
- Salt and pepper
- Chilli flakes (optional)
Method
- Cut the sun-dried tomatoes into strips.
- Mix all the ingredients for the marinade and season to taste with salt and pepper.
- If you can, let the marinade stand for 1/2-1 hour on the kitchen counter.
- Add chilli flakes to taste if you like, and if the marinade is going on a piece of fish or chicken, the juice of 1/2 lemon works beautifully in it.

Vh Gitte
Hej Gitte
Warm wishes, Dianna
