Discover a new favourite for your salad repertoire with this potato salad, which blends traditional and less traditional elements into an irresistible combination. This recipe for potato salad with apple, cauliflower and mustard vinaigrette is both simple and delicious, perfect as a side for the barbecue or as a fresh main-course salad.
The main ingredients are tender boiled potatoes and fresh, crisp cauliflower, which together with juicy pieces of apple give a lovely balance of texture and flavour. Spring onions, feta and salted almonds add further depth and crunch, making every bite both satisfying and complex.
What really lifts this salad is the creamy mustard vinaigrette. The dressing combines the sharpness of mustard with the smooth richness of mayonnaise, creating the perfect counterpoint to the fresh ingredients.
This potato salad can be made ahead, which makes it ideal for gatherings where you would rather spend your time enjoying the company. The salad keeps well in the fridge, and the flavours only improve as they mingle, so the leftovers make a perfect lunch the next day.
