Pearl barley salad with broccoli, pointed cabbage and apple – feta and pistachios.
Pearl barley salad with broccoli, apple and feta – a hearty, delicious salad with plenty of crunch, freshness and lovely flavours. It is perfect as a side for dinner, but it also works really well as a main-course salad for lunch, perhaps served with a piece of chicken or similar.
The salad is made with cooked pearl barley, finely shredded broccoli and pointed cabbage, crisp apple, shallots and plenty of fresh parsley. Everything is tossed in a Dijon mustard vinaigrette that brings the ingredients together and gives the salad lots of flavour.
Finally I crumble feta over the salad and toss it gently, before topping it with roughly chopped salted almonds or pistachios. The combination of the hearty pearl barley, the crisp vegetables and apple, the creamy, salty feta and the crunchy pistachios simply tastes so good.
A really easy pearl barley salad that is both fresh and filling – and that goes with all sorts of different dishes. It is also ideal as a lunch salad when you want something that is both easy and really good.
