Orzo with chorizo and tomatoes is a wonderfully easy, flavour-packed dish that brings the best of Mediterranean cooking straight to your table. The combination of orzo pasta, spicy chorizo and fresh tomatoes strikes a lovely balance between acidity, richness and depth, finished with grated Parmesan for extra flavour.
The best part? Everything is cooked in a single pan – a quick, simple one-pot approach that makes the washing-up a breeze.
The chorizo is fried until lightly crisp, releasing its spiced oil, which mingles with the juicy tomatoes and the creamy orzo.
The dish is ready in no time and works just as well for a weeknight as for a dinner with guests, when it needs to be easy but still delicious.
