Linsefrikadeller - Opskrift på vegetarfrikadeller med linser

The best lentil patties (linsefrikadeller)

Lentil patties (linsefrikadeller) – a spiced vegetarian take on Danish meatballs (frikadeller).

Lentil patties – my favourite recipe for moist, spiced vegetarian meatballs made with red lentils and plenty of vegetables. They are very easy to make, full of flavour and go with all sorts of dishes.

I make my lentil patties with red lentils, carrots and either courgette or finely shredded pointed cabbage. I also add onion, garlic and parsley to the mixture, along with rolled oats, plain flour and egg, which help to bind it. Sesame seeds and a few spices bring plenty of flavour, and a little freshly squeezed lime adds acidity and freshness.

Start by cooking the red lentils, then drain them thoroughly and let them cool completely before you mix everything together. I start with one egg and add another if the mixture needs it. The consistency should be on the soft side – so you won’t be able to shape the lentil patties by hand like classic meatballs.
Instead, take a good heaped tablespoonful of the mixture, place it straight in the pan and gently press it flat with the back of the spoon. A small tip is to dip the spoon in the oil in the pan first – the mixture slides off far more easily. Don’t make them too large, or they can be difficult to turn. Fry them until golden and crisp on both sides, and they are ready to serve.

These vegetarian lentil patties really are versatile. Serve them with a cold potato salad, tuck them into sandwiches, burgers, wraps or pitta bread – or use them in the same way you would falafel. They also taste great cold, which makes them perfect for a packed lunch the next day.

Method

  • Cook the lentils until tender – 20 minutes is usually plenty. Then drain them thoroughly in a sieve and leave them to cool, in the fridge if you like.
  • Stir the drained, cooled lentils together with the remaining ingredients. Start with one egg and let the mixture rest for 5 minutes.
If the mixture is too dry or won’t hold together, stir in another egg – it should be on the soft side.
  • Heat a generous glug of oil in a frying pan. Take a large tablespoonful of the mixture, place it in the pan and gently press it flat. Continue with the rest of the mixture and fry the lentil patties until golden on both sides. They need about 5 minutes per side over a medium heat.
Dip the spoon in the oil from the pan first if you like – the mixture will slide off more easily.
Don’t make the lentil patties too large – they can be hard to handle when you turn them.
  • Serve the warm, crisp lentil patties with your choice of accompaniments.

Tips

This quantity will most likely leave you with leftover lentil patties – save them for packed lunches.

Hvordan gør i?

    • Hej Tina

      Warm wishes, Dianna

  12. Er det 3 dl rå eller kogte linser?
    Er lidt i tvivl 🙂

    • Hej Tina

      Mange hilsner
      Dianna
