Flatbreads with cheesy fajita chicken – gooey comfort food.
Here is a really easy recipe for flatbreads with cheesy fajita chicken.
This is comfort food at its very best – gooey, full of flavour and loved by the whole family.
The recipe calls for only a few ingredients and is both quick and easy to make. The chicken is seasoned and quickly browned in the pan. Then come onion and plenty of peppers in three colours, flash-fried so they still have some bite. The filling goes onto flatbreads with cheese – either mozzarella or cheddar – and is baked in the oven until the cheese is melted and golden.
I top my flatbreads with a bang bang chilli sauce made from mayonnaise, two kinds of chilli sauce, a little honey, parsley and fresh lime.
You can also serve them with classics such as salsa, guacamole or crème fraîche – and ideally a crisp salad on the side. A very simple dish that tastes wonderful and is ready in no time.
