Creamy cucumber salad with feta pairs the fresh flavour of cucumber with the rich, creamy texture of Greek yogurt and feta.
The crisp, crunchy cucumber keeps the salad wonderfully fresh, and it goes perfectly with summer barbecues, a whole roast chicken, pan-fried pork chops and the like.
Try it with a Greek meal too, – for instance Greek meatballs with flatbread, with pitta bread or in my Greek tacos.
Creamy cucumber salad with feta also makes a perfect appetiser or snack in the summer sun. It is cooling, refreshing, crisp and creamy – a really good combination, and just right with fresh pan-fried flatbreads – click here for the recipe.
