Juicy veggie burgers made with lightly spiced chickpea patties, a creamy herb dressing and crisp fresh vegetables. The whole thing comes together in just 30 minutes, – and you have a healthy, filling dinner on the table.
I use an egg in the mixture, simply to bind it together. If you would like an egg-free chickpea patty, I recommend trying my falafel recipe, – shape the mixture into flat patties instead of balls and fry them in a pan 🙂

Method
Chickpea patties
- Put all the ingredients for the chickpea patties, except the oats, into a blender, – season with salt and pepper and blend to a coarse mixture.
- Then stir in the oats, – start with 100 ml and let the "mixture" rest for about 10 minutes. If the mixture is too soft, add another 50 ml of oats.*The mixture should hold together when shaped into flat patties in your hands, – but it must not become too dry. *While the mixture rests, you can make the dressing and prepare the vegetables.
- Heat a generous glug of rapeseed oil in a frying pan, shape the mixture into 4 flat patties and fry them over a fairly high heat until golden and lightly crisp on both sides. Season them with a little salt and pepper on both sides.Make sure they have had plenty of heat and taken on good colour before you turn them.
Herb dressing
- Mix the ingredients for the herb dressing and season to taste with salt and pepper.
- Set aside until you are ready to assemble the burgers.
Veggie burger
- Warm the burger buns in the oven.
- Spread the bottom half of each bun with herb dressing and top with salad leaves, carrot, cucumber and red onion.
- Place the chickpea patty on top, spread it with dressing and top again with the rest of the salad leaves, carrot, red onion and cucumber. Close the burger with the top half of the bun and serve.
