A recipe for the most delicious raspberry mojito – fresh, pretty and summery.
Raspberry mojito is incredibly easy to make – really, it is just a matter of adding a good handful of fresh raspberries to your classic mojito and muddling them in.
The raspberries give the drink a lovely sweetness, a fresh flavour and a truly beautiful colour.
So if you need inspiration for a few summer drinks – or perhaps for a birthday, New Year’s Eve or similar – you will find all my cocktail recipes here – click here.
When you are making a raspberry mojito, or mojitos in general, I warmly recommend getting a muddler – it makes it a good deal easier to press the juice out of the lime wedges and crush the berries.
Raspberry mojito
Ingredients
- 8 cl white rum
- 100 g raspberries
- 1 lime, cut into wedges
- 4 tsp sugar (I prefer cane sugar)
- 20 mint leaves
- Soda water
- Ice cubes
Garnish – optional
- Raspberries
- Mint
- Freeze-dried raspberries
Method
- Put the lime wedges, the rinsed raspberries, sugar and rum in a shaker or a glass and muddle everything together well – ideally with a muddler.
- Add the mint leaves and press/bruise them gently so they release their oils – just a couple of times with the muddler – and take care not to crush them too much.
- Fill 2 glasses with ice, ideally crushed ice – and divide the mixture between the glasses.Let the lime wedges, mint and so on go into the glasses too – there is plenty of flavour in them, and it looks wonderfully rustic.
- Stir well with a spoon so everything is thoroughly mixed with the ice, and top up your raspberry mojito with soda water.
- Garnish with fresh raspberries, freeze-dried raspberries and/or mint, if you like.
