Danish red dressing (rød dressing) is a creamy salad dressing with garlic and ketchup – a perfect partner for salads and shellfish, a baked potato or grilled meat.
My mother always made this dressing when I was a child, and the whole family loved it – and still does.
It was served with everything from prawn cocktails to summer barbecues, salads, the culotte roast (rump cap) and the potatoes. It is so simple, with a nicely balanced flavour from the sweet ketchup and the gentle bite of the garlic.
Red dressing is also really good as a dip for a bowl of chips, or for a plate of crisp vegetable sticks, cauliflower florets and the like.
I love red dressing, and should there be any left over, it keeps happily in the fridge for 3-4 days.
