Creamy lemon pasta – fresh, easy and ready in 15 minutes.
This creamy lemon pasta is a true weeknight favourite – simple, quick and full of flavour. Made with just a few ingredients and ready in only 15 minutes, yet good enough to serve to guests.
While the pasta cooks, butter is melted in a pan and garlic is fried briefly. Then cream, lemon zest, lemon juice and parmesan go in and melt together into a silky, fresh sauce. Once the pasta is al dente, it is tossed straight into the sauce with salt and pepper – and dinner is served.
The dish is incredibly easy to make and tastes wonderful – on its own or as a base for different kinds of meat and fish.
Use penne or pasta shells, which catch the creamy sauce and give you extra flavour in every mouthful.
Serving suggestions:
- As it is – simple, vegetarian and full of flavour
- With pan-fried salmon for a meal that balances fresh and rich
- With chicken breast, either pan-fried or grilled
- With slices of pan-fried pork fillet (tenderloin)
- With sliced steak and a little extra parmesan on top
Creamy lemon pasta
Ingredients
- 4-500 g pasta, ideally penne
- 25 g butter
- 1 tbsp oil
- 2-3 cloves garlic, grated or crushed
- 1 lemon, finely grated zest and juice
- 250 ml whipping cream (38% fat) or cooking cream
- 80 g parmesan, finely grated
- Pasta cooking water
- Salt and freshly ground pepper
- A little parsley, optional
Method
- Cook the pasta until al dente in a large pan of salted water.
- Meanwhile, melt the butter with the oil in a frying pan and fry the garlic for about a minute. Season with freshly ground pepper.
- Add the cream and the finely grated lemon zest, and let the sauce simmer gently while the pasta finishes cooking.
- Stir the parmesan into the sauce and season to taste with freshly squeezed lemon juice, salt and freshly ground pepper. Add a splash of the pasta cooking water to the pan as well.
- Toss the pasta thoroughly in the sauce and let it simmer for a couple of minutes until the sauce thickens slightly. Adjust the consistency with more pasta water if needed.
- Serve with a sprinkling of parsley and freshly ground pepper on top.
Den smager helt fantastisk og vi har lavet den flere gange, med mørbrad og med frikadeller og det var godt begge dele. Skal også prøve med laks.
