An easy, creamy feta dip – a sort of layered whipped feta topped with a Greek-inspired cucumber salad.
Whipped feta, or stirred feta cream as it is also called, is a smooth, creamy dip made from Greek yogurt and feta. This one is seasoned with lemon and garlic and topped with chunky pieces of cucumber tossed in a simple Greek vinaigrette.
Whipped feta makes a lovely side for the barbecue – fresh and crisp with the cucumber on top.
It also works as a light lunch with freshly baked flatbread or a baguette, alongside pitta bread or wraps, or on the tapas table with other small dishes.

- 1/2 lemon, juice only
- Salt and pepper
Greek cucumber salad
- 1 large cucumber, diced
- 25 ml olive oil
- 1 clove garlic, finely grated
- 2 tsp lemon juice
- 1 tsp dark balsamic vinegar
- 1 tsp oregano
- 1/2 tsp Dijon mustard
- 1/2 tsp honey

Method
- Mix the ingredients for the dressing, season with salt and pepper, and toss the cucumber in it.
- Put the feta, garlic, lemon juice and a couple of tablespoons of the yogurt in a mini chopper and blend until smooth and creamy. Then stir in the rest of the yogurt by hand, preferably in a bowl, so you don’t knock the creaminess out of the yogurt.
- Season the whipped feta with freshly ground pepper and salt if needed.
- Spread the whipped feta on a plate or in a bowl and top with the cucumber salad.
- Drizzle the remaining dressing from the cucumber over the top, season with pepper and scatter over parsley, cucumber sprouts or similar if you like.
