Feta cream, or whipped feta as it is also known – with figs and hot honey.
Some dishes are so simple that they almost shouldn’t be able to taste this good – and this is one of them. My whipped feta with fresh figs and hot honey is a small, luxurious appetiser that works perfectly as part of a tapas spread, as a starter or simply as a quick snack with a glass of chilled white wine.
The base is the creamy whipped feta, where feta is blended with Greek yoghurt, a little lemon and a touch of honey. It is spread out on a platter or plate and then topped with fresh figs cut into wedges, crunchy toasted hazelnuts, fresh thyme – and the hot honey.
Hot honey is simply honey warmed with chilli flakes and sharpened with a little apple cider vinegar – it gives a perfect balance of sweet, hot and tangy that goes beautifully with both the salty feta and the sweet figs.
What is whipped feta?
Internationally, “whipped feta” is already a huge trend, and that is exactly what I am making here. When the feta is blended or whipped together with Greek yoghurt, it turns into a creamy, airy, silky-smooth spread that tastes fresh and intense at the same time.
It is the perfect base for toppings such as figs and honey – but you can also vary it endlessly with different vegetables, fruits, herbs or other toppings.
It is very easy to make, and the result is a dish that looks beautiful and tastes wonderful. Serve it as a light lunch with bread on the side, as part of a tapas spread or as a snack when you want to treat your guests.
