Vegetarian baked fajita pasta – creamy, cheesy and full of flavour.
This vegetarian fajita pasta is a true family favourite that you’ll make again and again. Packed with flavour from fajita seasoning – whether you use a quick shop-bought packet or my homemade blend – this is a pasta dish that really tastes of something.
It’s full of vegetables and kidney beans, which make it both filling and substantial, and it’s layered with both cheddar and mozzarella for a gloriously cheesy finish. A little cream and chopped tomatoes bind everything together into a creamy, soft and saucy pasta dish that is finished in the oven until the cheese is bubbling and golden.
Serve it with a spoonful of ice-cold crème fraîche on top and a scattering of crushed tortilla chips if you fancy a bit of crunch – it is seriously good!
