A fresh, summery strawberry salad with avocado, lamb’s lettuce and feta, plus a good handful of basil leaves and lime. This salad is wonderful on a mild spring day or a warm summer evening. It is fresh, beautiful and tangy – and it goes perfectly with a summer barbecue or a piece of pan-fried chicken.
The salad takes no time to make, and with the Danish strawberry season just around the corner, I know it will be on the table many times in our house.
Try topping it with a good balsamic glaze too – it pairs perfectly with the other ingredients and adds a lovely depth to the salad.
Strawberry salad with avocado, feta and lime

- 2 spring onions, finely sliced
- 1 handful basil leaves

- 1/2-1 lime, juice and finely grated zest
- Olive oil
- Freshly ground pepper
Method
- Arrange the lamb’s lettuce and basil leaves in a serving dish or salad bowl.
- Halve the strawberries, or quarter them if they are very large. Toss them with the lamb’s lettuce and basil leaves.
- Cut the avocados into small dice and scatter them over the salad.
- Sprinkle with the finely sliced spring onions and crumbled feta.
- Drizzle with a little good olive oil and freshly squeezed lime juice, and top the salad with finely grated lime zest and freshly ground pepper.

Hej Jeanette
Warm wishes, Dianna
