This smørrebrød (open-faced sandwich) with smoked salmon, spinach, egg and mustard mayo is a lovely combination of crisp, creamy and fresh – an elegant, flavourful open sandwich that works both for lunch and as a light dinner.
Here the salmon is served on a slice of toasted white bread, which gives a pleasingly crisp contrast to the juicy topping. The butter-fried spinach adds a mild, nutty flavour, while the creamy mustard mayo with wholegrain mustard and lemon juice ties it all together. On top, a perfectly soft-boiled egg with a jammy yolk and plenty of micro greens, for both freshness and a beautiful finish.
It is a piece of smørrebrød that is both simple and elegant, and it can be made in no time – yet it still feels like a small luxury on the plate. Perfect when you want to treat yourself or your guests to something a little special.
