It’s no secret that I’m a big fan of cheesecake. It’s a relatively straightforward dessert to make, and I simply think it’s a beautiful one – whether served as individual portions or as one whole cake.
This cheesecake is my take on a true Christmas dessert – built on the flavour of risalamande, the Danish Christmas rice pudding with almonds and cherry sauce.
The base is a traditional digestive biscuit base, but with blanched almonds and vanilla blitzed in to make it a little more festive. The cream cheese filling is mixed with rice porridge, whipped cream and finely ground blanched almonds, and it’s topped with a jelly made from cherry sauce and redcurrant juice – simply beautiful, and every bit as good to eat.

Warm wishes, Dianna
