An easy roulade dessert made from a shop-bought raspberry Swiss roll topped with mascarpone cream, pistachios and fresh raspberries. It is a wonderful way to dress up a shop-bought Swiss roll, and the dessert takes under 10 minutes to make.
Raspberry Swiss roll is a classic most of us have sunk our teeth into at some point. It is usually served “as it is”, but do try this version, topped with a tangy mascarpone cream and fresh raspberries. It tastes lovely.
You can of course bake your own Swiss roll if you prefer, but this is a simple way to serve an “almost homemade” dessert in very little time.

Raspberry Swiss roll with mascarpone cream – Dessert in 10 minutes
Ingredients
- 1 shop-bought raspberry Swiss roll
- 150 g mascarpone
- 150 ml whipping cream (38% fat)
- 1/2 lemon, finely grated zest and juice – about 2 tbsp juice
- 2 tbsp icing sugar
- Fresh raspberries and mint
- Unsalted pistachios, finely chopped (optional)
Method
- Put the mascarpone, cream, icing sugar, vanilla, lemon zest and lemon juice in a bowl and whisk together until the cream thickens.*The cream thickens quite quickly, so take care not to overwhisk it, or it will turn grainy.
- Spoon the cream into a piping bag, fitted with a star nozzle if you like, and pipe the cream onto the Swiss roll. You can also spread the cream over the cake, if you prefer.
- Top with fresh raspberries, a little mint and, if you like, a sprinkling of finely chopped pistachios.
