An easy, delicious cold potato salad with bacon, apple and a wonderful mustard vinaigrette.
This potato salad is incredibly easy to make and a lovely alternative to a classic mayonnaise-based potato salad. It is fresh and full of flavour, and perfect as a side for a barbecue, a roast chicken or a stuffed pork tenderloin.
The bacon brings saltiness, depth and texture, while the apple adds freshness along with the spring onions and parsley. The vinaigrette is the finishing touch, together with a couple of handfuls of salad leaves.
If you can’t get hold of lamb’s lettuce, the potato salad works with other leaves too – baby spinach, rocket or shredded romaine.
Potato salad with bacon and apple is also perfect for the lunch table, and should there be leftovers, the combination is superb on a slice of Danish rye bread (rugbrød) the next day with a spoonful of mayonnaise and crispy fried onions – a potato open sandwich at its very best.
Potatoes for potato salad
I prefer small new potatoes when I make potato salad, and I am happy to leave the skins on – especially for an oil-based potato salad.
Cook them as described in the recipe – it gives a firm potato with plenty of flavour and a pleasant bite.
If you have leftover boiled potatoes in the fridge, you can of course use those – it is always a good idea to use up whatever leftovers you have.
Potato salad with bacon, apple and mustard vinaigrette
Ingredients
Potato salad
- 650 g small new potatoes
- 200 g bacon, diced
- 1 apple, diced
- 2-3 spring onions
- 1 handful parsley, finely chopped
- 2 handfuls lamb’s lettuce
Mustard vinaigrette
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 tsp coarse-grain mustard, I use wholegrain
- 1 1/2 tsp honey
- Salt and pepper
Method
Potato salad
- Scrub the potatoes clean of any dirt. *I prefer to leave the skins on – and peel them after cooking if I want to. You can also eat them with the skins on, or peel them before cooking – it is up to you.
- Put the potatoes in a pan with plenty of well-salted cold water, adding a few peppercorns and some herbs if you have them, and bring to the boil.
- Let them simmer over a medium heat for about 5 min. with the lid on.Turn off the heat and leave the potatoes to finish cooking in the hot water, covered, for about 15 min. *Cooking your potatoes this way gives you a lovely firm potato that does not fall apart. The time naturally depends on the size of the potatoes – so test them with a skewer once they have stood for 10 min. If they are still very hard, simply turn the heat back on for a couple of minutes – you quickly learn to judge the cooking time once you have done it a few times. If they only need a little more, leave them to stand in the water with the lid on.*Then rinse the potatoes in cold water so they cool down faster and can be tossed with the rest of the ingredients.
- Fry the bacon in a frying pan until crisp, then drain the pieces on a little kitchen paper.
- Mix the ingredients for the vinaigrette and season to taste with salt and pepper.
- Tip the cooled potatoes into a bowl with the apple, spring onions, bacon and parsley – pour over the vinaigrette and toss well.
- Add the lamb’s lettuce, toss quickly and serve the potato salad straight away.*The lamb’s lettuce wilts after a while – so wait to fold it in until just before serving.

Tak for din bested 🙂
Warm wishes, Dianna
