Crisp pizzas topped with fresh mozzarella, Blå Kornblomst (a mild Danish blue cheese) and walnuts – baked and finished with fresh rocket. This white pizza tastes wonderful – simple, delicious and with a lovely depth of blue cheese flavour. It does, of course, require that you like blue cheese, and in our house we are very fond of it.
Do save a little of the blue cheese to scatter over the pizza after baking – it tastes even better that way. Blå Kornblomst can be swapped for gorgonzola or another blue cheese, depending on your taste and what you can get hold of.
Pizza with blue cheese, walnuts and rocket
Ingredients
- 1 portion pizza dough – click here
- 250 g mozzarella
- 150 g Blå Kornblomst mild Danish blue cheese – or gorgonzola or another blue cheese
- 80 g walnuts
- 4 handfuls rocket
- Freshly ground black pepper
Method
- Drain the mozzarella balls and squeeze out as much liquid as possible. I like to wrap them in a little kitchen paper and give them a good squeeze, so they are completely dry.
- Divide the dough into 4 and roll out into thin rounds about 30 cm in diameter.
- Spread the mozzarella over the bases together with the Blå Kornblomst. Do save 50 g of the Blå Kornblomst to scatter over the pizzas after baking – it makes a real difference.
- Crush the walnuts, sprinkle them over the pizzas and season with pepper.
- Bake the pizzas in a preheated oven until crisp and golden, about 12-15 min at 250°C. Keep an eye on them – ovens vary.
- Top with the remaining Blå Kornblomst and plenty of fresh rocket.
