A creamy pizza bianco, generously topped with mozzarella and mascarpone – rich and indulgent. On top of that, thin slices of Hokkaido pumpkin (red kuri squash), homemade pesto, rocket and pine nuts: full of flavour and a lovely combination.
I had a piece of Hokkaido pumpkin left in the fridge, and since pizza was on the menu, I thought it was the perfect chance to try a new topping. It turned out wonderfully, and as always I’m a huge fan of pizza bianco with plenty of mascarpone – mmm.
I recommend a good homemade green pesto – try this rocket pesto; it’s perfect for this pizza.
