A simple, really good pizza topped with cheese, fresh chanterelles and roasted corn on the cob, – a lovely vegetarian pizza with plenty of flavour.
This pizza tastes simply wonderful; I love the slightly unusual topping, which was actually inspired by a tartlet I once had with exactly the same filling.
I prefer to use fresh corn on the cob, but when it is out of season, tinned or frozen sweetcorn can of course be used with equally good results.
It is important to brush your chanterelles clean rather than washing them in water, – they will soak up far too much water and make the pizza soft and soggy.
