Mini croissants with ham salad – easy, flaky and perfect for festive occasions.
These mini croissants with ham salad are irresistibly good and very simple to make – and they suit everything from brunch and tapas-style spreads to summer parties and graduation celebrations. A classic, creamy ham salad in crisp, home-baked croissants – it doesn’t get much better.
The croissants are made using a simple puff pastry method: the pastry is rolled out, cut into triangles and baked into small, golden, crisp bites. It calls for neither special baking skills nor a long preparation time – and the result is always delicious.
The filling is a homemade ham salad, creamy and full of flavour, which fits perfectly into the little croissants. They can be made in advance and filled shortly before serving, so they keep the crisp edge that makes them so good.
They work as canapés, as part of a buffet, for a picnic or as a small addition to the brunch table – a reliable favourite, whatever the occasion.
Mini croissants with ham salad
Ingredients
Mini croissants
- 1 roll ready-rolled puff pastry
- Beaten egg, for brushing
Ham salad
- 150 g cooked ham (leftovers, diced or similar)
- 50 ml mayonnaise
- 1 tbsp crème fraîche
- 1/2 tsp Dijon mustard
- 1-2 tbsp red onion, finely chopped
- 2 tbsp chives, finely chopped
- Salt and freshly ground pepper
To serve
- Fresh salad leaves
Method
Mini croissants
- Unroll the puff pastry on the worktop and cut it into long, narrow triangles running across the width of the sheet (the short way). The wide end of each croissant should measure 5-6 cm. See the video above the recipe.
- Roll the triangles up into croissants – starting from the wide end and rolling towards the narrow tip – and place them on a baking tray with the seam underneath. Brush with beaten egg.
- Bake in a preheated conventional oven (top and bottom heat) at 200°C for about 15-20 minutes, or until golden.
Ham salad
- Put the ham in a mini chopper or similar and blitz until finely chopped. Alternatively, chop it finely with a knife.
- Mix the ham with the remaining ingredients and season to taste with salt and freshly ground pepper.
Mini croissants with ham salad
- Cut or snip the croissants open and fill each with a little fresh salad and a spoonful of ham salad.
- Arrange on a platter and serve.
