Citrontærte med bastognekiks og mascarponecreme

Lemon tart with Biscoff base and mascarpone cream

Lemon tart with Biscoff base and mascarpone cream – an easy, fresh dessert.

This lemon tart with a Biscoff biscuit base and mascarpone cream is quite simply one of the finest lemon desserts there is.

A simple, lightly spiced base made from Biscoff (speculoos) biscuits, a soft, sweet-sharp baked lemon cream, topped with a light, fresh mascarpone cream – inspired by the classic key lime pie, but here in a lovely lemon version.

It is a really easy tart to make and calls for only a few ingredients, which makes it perfect when you want to serve a proper dessert without spending too long in the kitchen. It is also an obvious one to make the day before, as it needs plenty of time in the fridge to set properly.

The tart is baked first and then cooled to room temperature before going into the fridge for at least 3-4 hours – and preferably overnight. Before serving, it is topped with the mascarpone cream with lemon and a hint of vanilla, which gives it its final fresh, creamy finish.

The flavour is wonderful – the spiced base, the creamy lemon filling and the cold topping work together beautifully to give a dessert that is fresh, sweet and slightly sharp all at once.

You can also vary the base by using kammerjunkere (small Danish cardamom rusks), which give a slightly different but very good flavour – or use digestive biscuits if that is what you have in the cupboard.

Lemon tart with mascarpone cream

Lemon tart with mascarpone cream is a lovely combination of freshness and creamy richness. The sharp lemon is perfectly balanced by the soft, slightly sweet cream, making it a dessert most people love.
It is an obvious choice both for guests and for cosy evenings at home, and because it has to be made well in advance, it is also perfect when you want to be ahead of the game.

Method

  • Melt the butter in a saucepan and take it off the heat.
  • Blitz the biscuits to fine crumbs in a food processor and stir them into the butter.
  • Line the base of the springform tin with baking parchment and tip the biscuit mixture into the tin. Spread it over the whole base and press it halfway up the sides using the bottom of a glass.
Chill the base while you make the lemon cream.

Lemon cream

  • Whisk the egg yolks and condensed milk together for a couple of minutes.
  • Add the lemon juice and zest and whisk briefly to combine.
  • Pour the cream over the base so that it comes to within a couple of millimetres of the top of the biscuit edge. Use a spoon if the cream needs nudging out to the edges.
  • Bake the tart in a preheated conventional oven (top and bottom heat) at 170°C for approx. 20-25 minutes. The cream should have set, so if you gently shake the tin it should be firm.
  • Let the tart cool completely on the worktop before putting it in the fridge for at least 3-4 hours, and ideally overnight. Do not release the springform until the tart has chilled and rested.

Mascarpone cream and decoration

  • Whisk together the ingredients for the mascarpone cream until smooth and thick.
  • Carefully release the tart from the springform tin, peel the baking parchment off the base and place the tart on a serving plate.
  • Spread the mascarpone cream over the top and decorate with, for example, grated lemon zest and yellow edible violas.

    5 stars

      Warm wishes, Dianna

      Warm wishes, Dianna

  4. Kan man lave mascarponecremen dagen før? 🙂

    Tak for gode opskrifter

    • Hej Rikke

    Tak for gode opskrifter

    • Hej Ilse

      Warm wishes, Dianna
