Creamy tzatziki topped with a crisp, crunchy Greek salad.
This layered tzatziki tastes wonderful – as if it came straight from a Greek kitchen.
Perfect as a side for summer barbecues, or served as a starter or snack with your favourite bread, crackers or the like.
It is lovely on a warm summer’s day, but just as good on a blustery autumn day.
Every bite is crisp and crunchy, and together with the soft, creamy tzatziki – mmm.

Method
Tzatziki
- Coarsely grate the cucumber and squeeze out as much liquid as possible. Put the cucumber in a sieve, season lightly with salt – roughly the amount you would add to the dressing anyway – and toss it with your hands. Leave the cucumber to drain for about 15 min., squeezing out more liquid a few times along the way.
- Stir the yoghurt together with the garlic, olive oil, lemon juice and dill or mint.
- Then fold in the drained cucumber and season the dressing to taste with a little salt and freshly ground pepper.
Greek salad
- Stir together the ingredients for the marinade – olive oil, lemon juice, Dijon mustard, balsamic vinegar, honey, garlic and oregano.Season to taste with salt and pepper.
- Combine the vegetables, olives and feta in a large bowl, add the parsley and toss everything with the marinade.
Layered tzatziki – Tzatziki with Greek salad
- Spread the tzatziki in a thick layer on a plate.
- Top with the Greek salad and finish with a drizzle of olive oil.
- Serve with your favourite bread, alongside the barbecue or with a bowl of crackers.

Warm wishes, Dianna
