Is there anything more Danish, or more summery, than a cool bowl of koldskål (Danish cold buttermilk dessert soup)? I hardly think so. This recipe is a tribute to the long, light evenings when a simple dessert can become the highlight of a meal. With its refreshing blend of tykmælk (Danish soured milk, a little like a mild set yogurt), egg, lemon and vanilla, this koldskål is not just a dessert; it is a trip back to childhood summers, when every spoonful was a delight. This homemade version brings back all the best memories and creates a cosy mood around the dining table, whether you share it with family or friends. So let’s dive into this summer classic and remember the days when life’s pleasures were as simple as a bowl of koldskål.
My best recipe for homemade koldskål
The best homemade koldskål, tasting of Danish summer and happy childhood memories.
Homemade koldskål with tykmælk and egg is very easy to make, – and it tastes simply wonderful.
To be perfectly honest, I don’t think it is actually any cheaper to make your own koldskål, but there is something cosy about bringing the children into the kitchen to make it. For many people it brings back memories of childhood summers.
This koldskål recipe uses tykmælk and egg, – tykmælk can sometimes be hard to find, in which case I use ymer (a Danish soured milk product, similar to kefir yogurt) with 3.5% fat.
I have also used a good, plump vanilla pod for this batch of koldskål, – I love vanilla, along with plenty of finely grated lemon zest and freshly squeezed lemon juice.
Serve your koldskål with crisp homemade kammerjunkere, small crunchy Danish biscuits with a lovely flavour of lemon and vanilla.
Kan man godt bruge skyr istedet for tykmælk ? 🙂
Kan man bruge andet end almindelig sukker, som jeg ikke lige har pt
Hej Maria
