Easy, delicious sandwiches in the style of Joe’s Club Sandwich — with pesto, chicken, tomato, mozzarella and avocado. Filling, generous and full of mild, fresh flavours.
Joe’s Club Sandwich is perfect for lunch or a light dinner; for dinner, serve it with a portion of chips if you like.
I use Café Sandwichbrød from Kohberg (soft, oblong sandwich rolls); they are ideal for this type of sandwich.
Homemade Joe’s Club Sandwiches are really easy to make, and a good deal cheaper than buying them in the restaurants — and they hold more filling too, so you stay full for longer.
Make a homemade pesto for your chicken sandwich, or buy a good green pesto from the chilled section of the supermarket; they really do taste better than most of the ones sold in jars.
