Homemade tostadas are a wonderful way to bring an authentic, full-flavoured Mexican dish into your own kitchen.
Frying them in oil in a pan gives them a crispness and depth of flavour that really lifts the dish. They are very easy to make and take only a matter of seconds per tortilla, depending on thickness – so a whole batch is ready in no time.
For the best flavour, use corn tortillas, or a blend of corn and wheat, which gives a lovely taste and texture.
Tostadas make the perfect base for your favourite toppings – try them with spiced meat, creamy refried beans and fresh vegetables.
The result is a crisp bite with a little chew, both simple and irresistible.
I first came across tostadas at a Mexican restaurant in Key West – Old Town Mexican Cafe. They were so good, crisp and full of flavour, that I simply had to go home and try making them myself.
That was the start of a love affair with this simple but brilliant dish, which is now a favourite in our house.
What are tostadas?
Tostadas are a classic Mexican dish; the name simply means “toasted” or “crisp”. They are flat, crisp tortillas that serve as the perfect base for all manner of delicious toppings.
They resemble tacos, but the difference is that tostadas are not folded – they are served as an open “disc”, which makes them both decorative and easy to adapt to any taste.
Traditional tostadas are made with corn tortillas, either fried until crisp in oil, as in this recipe, or baked in the oven as a lighter alternative. Frying in oil gives you a deeper flavour and a superb texture that really makes them something special.
You can top your tostadas with almost anything, but a few classic combinations are:
- Spiced meat: Such as beef, chicken or pulled pork.
- Refried beans: A creamy, spiced bean purée that tastes heavenly.
- Fresh vegetables: Lettuce, tomatoes, avocado or radishes add freshness and colour.
- Crème fraîche or cheese: A tangy, creamy contrast that balances the spiced flavours.
- Salsa and lime: For an extra burst of flavour.
Tostadas are perfect for a relaxed dinner or as a fun way to serve food to guests. You can set up a “build-your-own tostada bar”, where everyone assembles their own version with the toppings they love most. That makes the dish versatile and ideal for grown-ups and children alike.
Homemade tostadas
Ingredients
- 8 mini tortillas – preferably corn tortillas
- Neutral-flavoured oil
Method
- Heat a small frying pan with neutral-flavoured oil.The tortillas need to be able to fry freely in the oil, so there should be about 1 cm of oil in the pan.
- Fry the tortillas over a medium heat, one at a time. Depending on the temperature of the oil and the thickness of the tortillas, they need between 30-60 seconds on each side.
- Set them aside on kitchen paper to drain, and serve as you like.
