Mini tortillas with Mexican filling

Homemade corn tortillas with a flavourful Mexican filling, – vary the toppings according to what you have to hand.
We had leftovers of both lamb and chicken, which we seasoned with our homemade Mexican spice mix, flash-fried and then covered with stock (separately, of course), and left to simmer over a low heat for half an hour or so until the meat was falling apart and almost braised, – it turned out wonderfully. If you don’t have any leftover meat, you can of course use fresh meat instead, – this is simply a very good way to use up what you have.
To make corn tortillas at home you need a tortilla press. Not many people own one, so you can of course buy good mini tortillas in the supermarket instead, they work every bit as well.
For toppings, likewise use whatever you have in the fridge, – salad leaves, peppers, sweetcorn, pickled onions and so on, – clear out the fridge and serve a great meal.

    • Hej Marianne

Det lyder mærkeligt, for dejen skal jo kunne æltes.
Er der målt korrekt, og hvilken mel har du mon brugt? 🙂

      Warm wishes, Dianna

  2. Kan man bruge andet maksmel ?
