Homemade Danish fish cakes (fiskefrikadeller) made with fresh salmon.
We love fish cakes in our house, and they are usually served with a good slice of Danish rye bread (rugbrød), remoulade (the Danish sweet-pickled kind), lemon and, ideally, a bowl of pointed cabbage salad with plenty of dill on the side.
These are made with salmon, but use whichever fish mince you prefer.
